Demonstration 1 – Follow basic food safety practices The purpose of this demonstration is for you to show how to handle food, clean the food area and dispose of food appropriately and hygienically. For this task, you must demonstrate how you follow food hygiene and safety measures during a minimum of one mealtime to the service standards. During or immediately after the demonstration you will be asked questions about the demonstration by your teacher/assessor. Assessment location: This task will be conducted in your work placement service or simulated environment (if applicable) and must include the following equipment/resources: • Food area • Drinking utensils • Food • Hand washing facilities • Utensils • Cleaning equipment • Food safety, cleaning/hygiene policies and procedures While you are performing the task, you must demonstrate the following: 1.1 Thoroughly wash and dry hands using correct hand washing procedures. 1.2 Wear appropriate footwear and ensure personal hygiene, clothing and PPE is adhered to in order to avoid contamination when handling food. 1.3 Handle and store food in accordance with service procedures and policies. 1.4 Clean and tidy food area in line with service procedures to avoid contamination and pests. 1.5 Keep food items for disposal separate from uncontaminated food, and follow food disposal procedures 1.6 Follow approved standards for cleaning of associated equipment and utensils.
