Irelands- Why food was exported as millions of starved? Having studied in Ireland (Cork Ireland, known as the food capital of Ireland) with two of the leading experts on Ireland’s food, culinary, and cultural history, Ireland’s food culture has been heavily influenced by the great famine. Ireland has a moderate, wet climate, that’s tempered by the North Atlantic stream… making it ideal for grazing for dairy cattle. It was obvious during my travels that beef and butter were the main exports. Currently, there is a fusion of past and present food patterns which gives food in Ireland a complex, distinctive and dynamic food character. There is a strong emphasis by some, to use the land for growing vegetables, harvesting seaweed for consumption and saving ancient seeds. It’s a recent paradigm shift in their food culture. Cafe’ Paradiso, in Cork is the best vegetarian restaurant I’ve had the pleasure of eating at. Chef Denis Cotter was an amazing restaurateur and had this to say about the food culture in Ireland: “There are movements to try to preserve our traditional food culture, which is worthy too, but there is so little there and what is there is a scrappy collection of dishes, some delicious but others only historically interesting, that they hardly add up to a national culture. The opportunity that exists is, I believe, to accept that we have an almost blank page and to cook as we see from the finest produce we can muster.” They are attempting to change their food culture/history from “potatoes” to sophisticated cuisine.
